These cookies are a great option to put that discard to use rather than tossing it. These cookies are so fluffy and soft. The discard and the lemon pair super well together so the flavors definitely dance in your mouth.

These cookies are interchangeable with any citrus you’d like to use. One of my all-time faves is Navel oranges and cutie mandarins. I also love the addition of raspberries or strawberries for a fun topping option.

Unlike my other lemon zinger recipe, this recipe is a bit too soft to make filled cookies with. If you do attempt filling them, make sure to use some cornstarch to ensure it doesn’t make the cookie soggy and fall apart.

I recommend trying the recipe as intended at least once before making adjustments, so that you can see and feel how they are before adding more wet things.
